Cooking w/ Maty - Millet Pilaf

This is definitly a favourite of mine,nice an nutty with a bit of peppery goodness.

What You Need:

Hardware:

Medium Saucepan (pot works too)

Wok or frying pan

Spoon

Baking Tray

Software:

1 onion, chopped

55g millet

1 leek, sliced

1 zucchini, sliced

40g almond slices

140ml water with a bit of salt in it

ground pepper

1/4 tsp cinnamon

Start by preheating the broiler to 200 degrees, and sautee the onions for 3 minutes in a bit of vegetable oil.

Take your millet

Add it to the onions and cook for another 3 minutes

Add the water salt mixture to the onions and millet and bring to a simmer, cover, and cook for 20 minutes.

By now your almonds should be done.

when you have approx 5 minutes left of the millet cooking, stir fry the leeks, and zucchini until tender

Now mix the vegetables, cinnamon, and pepper, into the millet onion mix and cook for another 2 minutes.

Serve and enjoy :) I think the almonds are what really make this meal.

Curried Mushrooms over CousCous

This was one good meal. It consisted of mushroom and onions in a curry sauce made of flour, soy yoghurt, tumeric, cumin, coriander, ginger, and chili powder. I probably should have put it on top of something healthier, but i only had cous cous at the time. Delicious.

Spaghetti w/ Bean & Caper Sauce

Today for dinner I made spaghetti with a bean and caper sauce. The sauce consisted of black beans, tomato paste, onions, garlic, red peppers, oregano, and capers. It could have used a bit more capers as it was a little bland, but it served as a pretty good spaghetti sauce, lots of protein.
